Cet observatoire rassemble une grille de décision pondérée. Elle ne remplace pas une analyse de laboratoire ni un jury de dégustation, mais elle permet de comparer des bouteilles de manière plus propre : chaque critère correspond à une preuve que l'on peut chercher sur l'étiquette, chez le producteur ou lors de la dégustation.
